Im just going to come out and say it. The weeks that I dont prep my meals, I end up eating pretty bad and stopping at the store in the morning on my way to work to grab some food for the day. I wouldnt even call some of it food- more like crap. Non -nutritious crap that I just happen to grab that I think will get me through the day. I have a sweet tooth, so sometimes I quickly grab things that will please my taste buds instead of my body. Bad idea. I always end up regretting it. Not to mention if I dont have healthy food on hand, I sometimes end up grabbing unhealthy food from the teacher lounge. Yikes!
As a teacher, I truly feel like Sundays are my holy days. I just want to go to church, relax and soak up every second that I have left of the weekends. A teachers life and week is crazy. Seriously. Never ending work. So, when it comes to Sundays I dont usually love going anywhere past 3 p.m. Weird I know. But, Ive realized that I enjoy meal prepping for the week starting then. Its somewhat calming to me to figure out what my husband and I will be eating for the week, as well as prepping my breakfast and snacks. Can I just let you in on a little secret? I love to eat. all. the. time. Im usually hungry every two hours no matter what I eat. At work I have a plan time and a lunch time- neither actually consist of me sitting down. Im usually running around with kids or working. So my meals need to be easy to grab, nutritious and substantial.
Sunday afternoon I start planning my week. I usually check to see what we might have in the fridge, freezer and pantry for the weeks upcoming meals. No point in buying more groceries that I dont need if I still have some things in the kitchen I can use. After that I usually flip through some of my cookbooks for inspiration, and yes, sometimes my food board on Pinterest. You can find out my favorite go-to books here. I have a very helpful little meal planner that I use to plan out my grocery list and on what days were eating certain meals. Its small enough that it fits in my purse for a run to the store- perfect!
Right now, I just have this small dry erase board that shows our weekly meals (Target dollar section for $3). Its really come in handy when my husband gets home before I do so he knows what to get started for dinner. And the end of the day I just erase it off the board.
Once I have all the meals planned out I head to the store to grab anything else that I need. For the next couple hours Im usually dancing in the kitchen to some music with a glass of wine or margarita, prepping the meals for the week. If its my meals for work, I get those all made if I can. For example, this week I made maple-cinnamon apple & pear baked oatmeal for breakfasts every day, and some oil-free chocolate zucchini muffins for a snack from the Oh She Glows Cookbook. I usually make a smoothie the morning of to take to work, and I pack my lunch the night before.
Planning out my food for the week, even if its just a list helps me tremendously! I no longer am rushing around during the week, or making last minute trips to the grocery store finding ideas for dinner. Im not running late in the morning packing snacks and lunch for work- or even skipping breakfast. My days are better because I have food to fuel my body and my workouts after work. I actually have energy to get to the gym after a long day and perform good on my workouts. I eat better every day, I dont eat crap- plain and simple.
If you take time on Sunday to plan out your meals you will have a much less stressful week. Yes, it make take some extra time out of your weekend, but its well worth it. You dont spend extra money on restaurants because you dont know what to cook, or you didnt make it to the store this week. It helps our budget because we plan for it. Plus if youre like me, and the hubby beats you home on some days, you will walk in the door to a cooked meal because he already knew what it was- bonus.
